Inventory status is an inventory dimension that is turned on when advanced warehouse is turned on in Dynamics 365.  

The inventory status dimension allows they system to tell which items can be used and which items cannot.

It is important to know how to change the status as it is important to keep up to date to allow the system to accurately determine which items are available.
